Being from New Mexico, I have been raised on Mexican food mostly. That means, lots of chile, spices, but mostly oil!!! Most recipes I know, have been passed down from my grandma and family so I don't always have exact measurments on seasonings, etc. therefore if you see spices with no amount, season to taste. Italian food is also my other passion! Or maybe a hobby with as much as I eat of it, but I will be experimenting with a few new dishes and will let you all know how they go!! Choa! 





5 Meals in Under 45 Minutes

Alright ladies and gents, here are the step by step recipes for the 5 dishes that I talked about on the home page. You will notice a lot of Mexican and Italian inspired dishes throughout my future tutorials, so if you are a spicy food enthusiast, enjoy! I will be uploading pictures of all of the dishes soon! Monday- Green Chile Enchilada Casserole
This is a great meal that my mom has cooked me since I was probably 5. Winter or Summer, I crave a dish of these. So please enjoy and tell me what you think!
Prep Time: 20 Minutes
Bake Time: 25 Minutes

   Ingredients Needed
  • 1 lb of Lean Hamburger Meat
  • 12-16 Corn Tortillas
  • 2-3 Fresh Green Chiles (Mild or Hot)-Diced
  • 1 Can Cream of Mushroom Soup
  • 1/2 Onion
  • Graded Cheese
  • Garlic Salt
  • Olive Oil or Vegetable Oil
  • Sour Cream (optional)


Instructions-  1.) Preheat Oven to 350 degrees 2.) Brown hamburger meat in skillet over medium heat; add in onion and season to taste with garlic salt 3.) Heat oil in small skillet over medium heat; once hot, douse corn tortillas in oil . (Be careful not to overcook tortillas in skillet. This can make them too chewy or even hard. You will not want your tortillas in the oil for more than 10 secs.) 4.) Heat Cream of Mushroom Soup in saucepan and slowly add in the diced chile. 5.) In a medium sized casserole dish, begin layering starting with the corn tortillas, ground beef, then chile/cream of mushroom soup, followed by cheese and the optional sour cream. (Continue layering to your desired level. Typically, I make two heavy layers of meat and make a top layer of cheese and sour cream) 6.) Put casserole into the oven and bake for 25 minutes, or until cheese is completely melted!





Tuesday- Veggie Skillet Lasagna with Parmesan Zucchini

Prep Time: 5-10 Minutes
Cook Time- 30 Minutes or Less

  Ingredients Needed

Lasagna
  • 6 oz. Lasagna Noodles- broken into 1/4 pieces
  • 1/2 cup Ricotta Cheese- Skim or Part Skim will do
  • 1/2 cup Fresh Mozzarella in a ball-Shredded
  • 2 Cans Diced tomatoes (Italian Spiced)
  • 1/4 cup Tomato Sauce
  • Fresh Basil- to taste
  • Parsley- Fresh if you have it- to taste
  • Parmesan Cheese-to taste
  • 1 Large Onion
  • 1Cup Mushrooms
  • 2 Cloves of Garlic
  • Olive Oil
Parmesan Zucchini
  • 2 sliced Zucchini
  • Parmesan Cheese
  • Olive Oil
Instructions-

Lasagna 1.) In a large pan, begin boiling lasagna noodles until al dente. 2.) Heat oil in a large skillet over medium to low heat. 3.) Add in onion and allow to soften. 4.) Add in garlic and mushrooms and allow to simmer for about a minute (Watch heat level when garlic is added. Avoid too much heat that can result in garlic becoming bitter) 5.) Add in tomatoes, tomato sauce, basil, and salt and pepper to taste; allow sauce to thicken by cooking for about 5 minutes. 6.) Once fully cooked, add noodles into sauce and stir. 7.) Add ricotta cheese in a scoop at a time; add mozzarella and Parmesan. 8.) Add in parsley and continue to cook until thick~2 minutes.9.) Season to taste with salt and pepper


Parmesan Zucchini-

1.) Turn the Broiler on to begin heating-350 degrees 2.) Take sliced zucchini and place them on a cooking sheet covered in foil and douse them with olive oil. (You can be sparingly) 3.) Sprinkle with Parmesan Cheese 4.) Broil until cheese is golden brown



Wednesday- Lemon Pepper Chicken with Baked Red Potatoes and Grilled Asparagus

Prep Time: 5-10 Minutes
Cook Time: 30 Minutes

 Ingredients Needed

Lemon Pepper Chicken-

  • 3-4 Skinless Boneless Chicken Breast
  • Lemon Juice
  • Lemon Pepper Seasoning
  • Salt
Baked Red Potatoes
  • 4 Red Potatoes- Washed
  • Sour Cream
  • Butter
  • Salt and Pepper
Asparagus
  •  Fresh Asparagus
  • Olive Oil
  • Garlic Salt
  • Pepper
Instructions  FYI- Make sure you start your potatoes first for this meal!

Lemon Pepper Chicken-  1.) Marinate chicken in lemon juice and lemon pepper seasoning the morning before (or at least 20 minutes before grilling) 2.) If cooking on a grill with an open flame; wrap in foil season with the lemon pepper again and squeeze lemon juice on the breasts. If cooking on an electric grill; skip the foil and follow above steps 3.) Grill for approx 10-12 minutes or until center is fully cooked.

Baked Potatoes- Since the grill is already lit for the chicken this will be easy! 1.) Wrap potatoes in foil and throw them on the grill for 25-30 minutes depending on your heat setting. Cook until soft.2.) Enhance with your favorite toppings and seasonings!

Asparagus-  1.) Cut woody end off of asparagus after washing. 2.) On a sheet of foil, sprinkle olive oil over asparagus, season with pepper and garlic salt 3.) Wrap them in foil and grill for 10-12 minutes.


Thursday- Shrimp Quesadillas with Guacamole and Bean Taquitos

Prep Time: 15 minutes
Cook Time: 5 minutes

 Ingredients Needed

Shrimp Quesadillas
  • 10 Small Shrimp- cleaned and diced
  • Flour tortillas
  • Grated Cheese
  • Butter
  • Green Chile-diced
Guacamole
  • 3 Ripe Avocados
  • Lemon Juice
  • Garlic Salt
  • Pepper
  • "La Victoria" Salsa- Hot or Mild
Bean Taquitos
  • 1 can refried beans
  • corn tortillas
  • Veg. Oil
Instructions-

Shrimp Quesidillas- 1.) Butter the bottom of your skillet and allow skillet to slowly heat. Prepare your quesadilla by taking one tortilla and layering it with cheese, diced shrimp, and diced chile, topped by another tortilla. 2.) Take quesadilla and put it into warm skillet. 3.) Heat until cheese is melted and until tortilla begins to be lightly browned or crisped

Guacamole- 1.) Mash Avocados in a bowl. 2.) Mix in salsa and lemon juice. 3.) Season with garlic salt and pepper; mix thoroughly. 4.) Refrigerate! ( To avoid a brown discoloration in your guacamole, leave one avocado seed in the bowl while serving and refrigerating)

Bean Taquitos 1.) Heat oil in skillet. 2.) Warm refried beans on stove top. 3.) Spread beans on corn tortillas. 4.) Roll tortillas to form taquitos. 5.) Deep fry in oil until tortilla is crisp.


Friday- Baked Tortellini

Prep Time: 10 min
Cook Time- 20 min

 Ingredients Needed
  • 1 Package of Tortellini- ( I recommend using Herb Chicken)
  • 1 Can of Alfredo Sauce of  your choice
  • Fresh Mozzarella
  • Fresh Prosciutto
  • Peas (Optional)
Instructions  1.) Preheat Oven to 350 degrees. 2.) Boil tortellini until al dente. 3.) In a casserole dish, combine cooked tortellini, prosciutto, Alfredo sauce, mozzarella, and peas. 4.) Bake until cheese is melted- 15-20 min. *5.) If DESIRED- turn oven to broil for 2-4 minutes and allow cheese to form a nice golden crust on top of tortellini.

SWEET TREATS


Fresh Fruit Pie- This is an extremely simple dessert and can be personalized with any type of fruit you fancy! Let me know how it goes...

Ingredients Needed

  • 1 package of sugar cookie dough- 24 ct.
  • 1 package of cream cheese
  • Strawberries- Sliced
  • Kiwi- Sliced
  • Blueberries- Sliced
Instructions 1.) Preheat oven to indicated heat on cookie label. 2.) Allow to bake for appx. 12-15 minutes (Do not cook as long as you would let a normal batch of cookies go. You will want the crust to be a little gooey.) 3.) Allow cream cheese to soften, and spread over warm cookie crust. 4.) Slice your favorite fruits and layer on top of cream cheese. 5.) Allow to chill in refrigerator for 25-30 min.





Watermelon Lemonade- I absolutely love watermelon and this drink was a hit at my recent bbq! All of the citrus flavors from the lemons and orange combine to make a heavenly lemonade! Enjoy..

Ingredients Needed
  • 4 Cups Water
  • 2 Cups Sugar
  • 2 Cups Fresh Lemon Juice
  • 1 Cup Fresh Lime Juice
  • 4 Cups Ice Cubes
  • 2 Cups Watermelon- Diced
  • 1 Orange- Sliced in rounds
  • 1 Lime- Sliced in rounds
  • 1 Lemon- Sliced in rounds

Instructions- 1.)To create sugar syrup- mix 2 cups water and 2 cups sugar into a bowl; put in freezer while you prepare the rest of the drink. 2.) In a bowl or pitcher, combine all additional ingredients and sugar syrup. 3.) Allow to chill until icy cold!
